Nous associons naturellement un beau produit à un sublime endroit sachant que je retournais enfin dans une ville perchée sur une falaise, j'avais scénarisé la dégustation en amont. Anticipation dans la simplicité. Le spot est trouvé. Derrière le cimetière de Bonifacio, sur un muret où je me pose avec ma boîte mosaïque face à l'immensité bleue. Cette mer omniprésente et calme, le ciel laissant voir distinctement les côtes sardes me mettent en condition de goûter au mieux ce caviar vintage. Le cérémonial de l'ouverture de la boîte fait partie du plaisir. L'outil adéquat ainsi que la cuillère apportent l'étiquette. Première cuillère en bouche, c'est l'iode qui me porte au diapason de ma vision méditerranéenne. Puis ce sont ces notes d'olives noires en fusion optique avec les oliviers qui me séparent de l'étendue d'eau azur. Étrange communion des éléments et des saveurs. Le lieu est parfait. Ce moment "caviar" inoubliable.

We naturally tend to associate a fine product with a beautiful setting. Knowing that I was finally returning to a town perched on a cliff, I had scripted the tasting in advance. Anticipation of simplicity. The spot was found. Behind the Bonifacio cemetery, on a low wall where I sat with my mosaic box facing the vast blue expanse. This omnipresent and calm sea, with a distinct view of the Sardinian coast on the horizon, put me in the right frame of mind to taste this vintage caviar at its best. The ceremonial opening of the box is part of the fun. The right tool and spoon to comply with etiquette. With the first spoonful in the mouth, it was the iodine that brought me in tune with my Mediterranean vision. Then it was notes of black olives, in optical fusion with the olive trees that separated me from the expanse of blue water. An extraordinary communion of elements and flavors. The place was perfect. This “caviar moment”, unforgettable.
